HERE'S WHAT'S HAPPENING IN OUR COMMUNITY!

Food tells a story. It shares with you its origins, culture while also nourishing your body and soul. The best way to learn about others and create deep relationships is through sharing a meal. Our good friend Grant Sahag actually runs a monthly community dinner in Hoboken to do just that. I’ve attended one and it was awesome.

Today I wanted to share a little recipe with you. It is my wife’s Italian stew. Did you know, that Chinatown and Little Italy are located right next to each other in Manhattan. We are a match made in heaven. 

Try out this recipe for your meal prep this week and let me know how it goes:

4 cloves Garlic, minced (I love garlic)

1 yellow onion, diced

4 stalks celery, chopped

2 Large zucchini, diced

2 cans chopped tomatoes

1 small kabocha squash (can sub with potatoes), cubed

½ head of cabbage, shredded

1lb ground turkey breast

1lb ground turkey

2 Tbsp tomato paste

Couple sprigs of rosemary

2 cups of vegetable broth

Salt

Pepper

Red pepper flakes

Instructions (use dutch oven)

  1. Saute garlic, onion, and add salt, pepper, red pepper flakes and tomato paste

  2. Add celery

  3. Add Kabocha squash

  4. Add zucchini

  5. Add turkey (let cook fully)

  6. Add tomatoes

  7. Add cabbage

  8. Add vegetable stock

  9. Simmer for 20 minutes or until the Kabocha squash is tender!

  10. Add more seasoning as needed

This goes really well with some bread on the side, topped with ricotta cheese, parmesan and basil. Enjoy!
